Lentils

Lentils (Lens culinaris) are grown in Western Canada. A wide range of lentil types and sizes are grown and are available with different seed coat and cotyledon colors. Canadian lentil varieties are available with seed coat colors that range from clear, green, brown, grey and mottled purple and black. Cotyledons can be yellow, red or green. The two main types of lentils produced in Canada are green lentils with yellow cotyledon and red lentils with red cotyledon.
